Pregnancy Over 40, Fertility Over 40 Helped With CabbagePurple (red) cabbage is what I consider a super food.
I usually buy it every other week (I alternate with greens on my off week) and I make a yummy cole slaw recipe. It's sort of a greek cole slaw which I'll share here:
Cut a head of purple (red) cabbage in half or thirds immediately before eating (don't cut ahead of time because this may damage some nutritional value - refrigerate the other half/third for left overs for use later)
Use a cheese shredder and shred the coleslaw as finely as possible (this make digestion a littler easier)
Add a little salt and pepper to taste
Drizzle a little olive oil on the coleslaw
Add vinegar or a vinagrette spritzer (most of these are very low in calories)
Sprinkle some feta cheese
Dice a small tomato and add to the coleslaw
Add about 5 greek olives
Mix well and enjoy!
